Steps to make Mutke whole wheat:
- First let's mix the whole wheat flour, salt and water and knead a dough. A little harder that what you knead for roti. Now make a long elongated spiral rolls and with the tip of your index finger and thumb apply some oil and just pinch a small amount of dough.
- Make this Mutke ready and keep it aside. (You can dry this Mutke under sun heat and store it for a month)
- Now let's boil this Mutke in as big vessel by adding salt. (The same like we do for boiling paste) but do not drain it. Keep it aside dipped in the water.
- Now let's make the masala paste..first on the gas burner.. jeep the dry coconut and let it burn till it becomes black.in mixer add all the ingredients mentioned under masala paste.
- Now keep the tempering ingredients and other ingredients ready.
- Now in a kadai. Add oil.. once the oil is heat.. add mustard, cumin seeds,hingham and curry leaves and saute for 2 min.
- Then add the paste which we had grind to the tadka. Saute it and let it cook for 5 min till it leaves the oil from it's side.
- Add some water, sugar, salt and lime juice, cooked daal.and let it simmer for 5 more min.. then add the magic masala and again stir and simmer for 5 more min.
- Now add this masala to the boiled Mutke and let it simmer for 10 more min.. this way the Mutke will absorb the kala masala.. and will he a little thick..if needed add more water to keep the consistency a little watery..do not make more watery..add salt according to your taste.
