- Get 2 cup water (may need to add more)
- Make ready 1/2 can rotel
The beans are served over rice with browned smoked sausage, or add the sliced and browned smoked sausage to the beans. Andouille sausage is an excellent choice. Set aside until cool enough to crumble for garnish. Melt the butter in a dutch oven or very large saucepan and cook the onion, garlic, celery and carrot, covered, until softened.

- In a crock pot put pepper garlic onion then put Ham on top
- Add the juice from cooking the Ham and enough water to come halfway up the ham cook on low over night
- In the morning add the beans (make sure to look through them) Zatarain's Creole seasoning ½ can rotel and 2 cups water
- Cook on low all day. When you get home or at some point during the day check the liquid level. Add more if necessary.
- Eat over rice with some corn bread.
Set aside until cool enough to crumble for garnish. Melt the butter in a dutch oven or very large saucepan and cook the onion, garlic, celery and carrot, covered, until softened. Add the beans, ham, ham bone, water, worcestershire sauce, parsley, thyme, bay leaves, lemon juice, pepper flakes, and salt and pepper to taste. Once water begins to boil turn heat down to low, add remaining ingredients consisting of onions, garlic, green pepper pod, and bay leaf then allow to ham hock and red beans to simmer. Before serving remove ham hocks and beans from pot.
